Bacon Wrapped Cod by Diverse Dinners

Cod fillets are doused in a parsley marinade, wrapped in a thick slice of bacon and then roasted. Finally, a sauce is created from the leftover marinade and the juices from the Bacon Wrapped Cod. Bacon Wrapped Cod by Diverse Dinners

I used pork applewood smoked bacon, but you can use beef bacon if pork isn’t your thing, just make sure it’s thick cut. Splurge a little and buy a really nice smokey bacon. The flavor and scent will really make this dish special.

Bacon Wrapped Cod

Ingredients

  • 3/4 cup fresh parsley leaves
  • 2 garlic cloves
  • 1 tsp red chili flakes
  • 2 tsp rice vinegar
  • 2 tbsp low sodium soy sauce
  • 1/4 cup olive oil
  • 4 x 5-6 oz cod fillets
  • 4 slices of thick cut applewood smoked bacon

  • Blender
  • Roasting Pan

Instructions

  • Blend garlic, chili flakes, vinegar, soy sauce and olive oil with 1/2 cup of parsley until smooth.
  • Place cod in a bowl.
  • Divide parsley marinade into two equal parts and pour one portion over cod and mix around until cod is completely covered in marinade.
  • Wrap one slice of bacon around the center of each piece of cod and place in roasting tin.
  • Repeat until all four cod fillets are covered with bacon.
  • Place in a preheated oven at 450 and allow to cook for approx. 15 mins, or until you can see the flakes begin to form in each fillet, then remove from oven.
  • Carefully tip out released cod and bacon juices into the set aside portion of marinade.
  • Add 1/4 cup of parsley and blend until smooth.
  • Heat the broiler on high and place fish, still in the roasting pan under it. The bacon and the edges of the cod will become golden. Only a minute or two is necessary.
  • Serve immediately with a generous spoonful of sauce.
