Today’s recipe is Cherry Tomato Edamame Salad, it’s a simple side salad with impressive eye appeal and bursting with flavor. 

I’ve been lucky to get my hands on some really tasty cherry tomatoes recently. Not surprisingly, their wonderful flavor inspired me to create a couple of dishes that feature cherry tomatoes in all of their glory.

Edamame and tomatoes go really well together. Tomatoes are soft, sweet and tart, while edamame is firm and subtle. All that is needed to make these two foods into a great salad is red onions, some extra virgin olive oil and lemon juice, and then finally salt to taste. I used shelled edamame, frozen, which is much easier to find than fresh, and cooked it using the instructions on the packet.

Cherry tomatoes and edamame are available year round, so anytime is a good time for Cherry Tomato Edamame Salad. This is a great salad for the kids too, those bright colors are bound to draw them in.

Cherry Tomato Edamame Salad works really well with fish, in particular filleted fish such as salmon, cod, sea bass. Cherry Tomato Edamame Salad and salmon would make a wonderful weeknight dinner or Saturday lunch. Quick and easy, and full of flavor. I love salads that you can just throw together, and “hey presto” it’s done. It helps make meal times so much easier, and a result life is much easier.

Edamame is high in protein and a good source of antioxidants. Surprisingly, edamame is also a good source of fiber. I have trouble getting the fiber I need, so edamame will be one of my go to snacks from here on.

Cherry Tomato Edamame Salad

Ingredients

  • 20 oz cherry tomatoes
  • 12 oz frozen shelled edamame
  • 1/4 cup red onion sliced
  • 2 tsp lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt to taste

Instructions

  • Rinse tomatoes then slice them in half and set aside.
  • Cook edamame as directed on the packet.
  • Place tomatoes and edamame in a serving bowl then add onion.
  • Mix ingredients then add lemon juice and olive oil.
  • Mix ingredients thoroughly then add salt to taste and serve immediately.
