With summer about to come our way who’s ready for some light desserts made with fresh fruits and berries? Well I am and if you are too, a great Simple Berry Sauce will be a nice addition.

Simple Berry Sauce by Diverse Dinners

I’m always happy when I have Simple Berry Sauce in my fridge it’s the perfect partner to drizzle over ice cream, puddings and cakes. It’s quick and easy to make and full of natural ingredients to boot. I love it and I hope you will too.

I should point out that there is a little booze in this recipe, Triple Sec. It isn’t a vital ingredient, therefore including it is totally optional. I like to include it as its bitter orange flavor cuts the sweetness of the sauce just a little and the result is a more complex, dare I say it, refined flavor. Any Triple Sec liqueur will do, don’t feel you have to buy an expensive brand such as Cointreau unless you have plans to use it for another recipe. I love Cointreau in my salad. Yes, in my salad. No need to buy up all the berries for this sauce, all that is needed are strawberries and raspberries. In fact, if you are unable to get hold of either one, you can substitute with the other. Nonetheless, I prefer both in this recipe. The combined berry base laced with orange flavors will have you licking your lips in splendor, trust me.

You can use fresh or frozen berries, but I usually use fresh. Berries are in abundance this time of year in New York and reasonably priced, thankfully.

Simple Berry Sauce

Ingredients

  • 1/2 cup white sugar
  • 4 tbsp orange juice
  • 2 cups raspberries (fresh or frozen)
  • 1 cup strawberries (fresh or frozen)
  • 1 tbsp triple sec (Optional)

Instructions

  1. Tip sugar into a small saucepan and place on a high heat.
  2. Stir until sugar is melted then add berries.
  3. Continue to stir as the berries break down and flavors combine then remove from heat.
  4. Allow berry mixture to cool a little then transfer to a blender and blend until completely pureed.
  5. Strain blended berry mixture back into the saucepan and return to heat, discard seeds.
  6. Add triple sec and stir until sauce is reduced by one quarter.
  7. Allow sauce to cool then serve.
