This three bean salad is one of my “time saver” recipes. 15 mins to prepare, no more. 

Three bean salad can be served as a side dish, it is a great substitute to complex carbs and a nice accompaniment to meat and fish. It is also great at buffets or potluck and a wonderful vegetarian dish. Regardless how you serve it and to whom, it is darn tasty.

Three Bean Salad

I rarely eat canned foods, but I do like to keep some canned beans and corn on hand whenever I’m in need of a shortcut or for dishes such as this. No need to soak the beans overnight and painstakingly cut corn from its cob.  For this recipe, your essential utensil is a can opener, just rinse the ingredients, season and you’re good to go.

My friend Trevor had this three bean salad as a snack, he’s trying to trim down for his trip to London soon. He has noticed a swelling in his midriff due to constant sampling of my recipes, so he has decided to cut back, he wants to be svelte for the ladies. It is also a meal I enjoy when I’m watching what I eat, I usually add quinoa or serve it with seared tuna and I’m good. Three bean salad is of course high in fiber, which means that not only will it aid your weight loss program, but it will also provide bulk to your diet giving you that full feeling much sooner than a traditional salad.

How about adapting this recipe for a game day party? If your husband (fella, lad, bloke, chap, dude, honey – my readers span the globe, so I felt compelled to translate) require a more hearty meal, you could add chicken, Italian sausage, or ground beef. I’m sure it will be a hit – right?

Ingredients

  • 1 cup of canned kidney beans
  • 1 cup of canned black beans
  • 1 cup of canned white beans
  • 1 1/4 cup of canned corn
  • 1/2 cup onion minced
  • 1 cup celery
  • 1/4 cup cilantro minced
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  • Make sure to thoroughly rinse the canned ingredients and leave to drain for 5 mins.
  • Combine beans, corn, onion, celery and cilantro.
  • Then add olive oil and lime juice
  • Mix thoroughly then season with salt and pepper.
  • Serve as required.
