Heat grill on a medium heat, then spray with oil, just a touch.
Form two 8 oz patties making sure the center of each patty is a less dense than the outer edges. Just gently press down in the center with your fingers and thumbs while holding each patty in both hands. Do not overwork the patty.
Sprinkle burger patties with a pinch of salt on each side and then cook to preferred temperature.
If you have a grill with a side burner or panel, set patties on that area, which should be a little warm, and allow to rest. If not, make sure to have a prep table to hand.
Combine the three cheeses and then split in half to apply to each burger and set aside.
Grill brioche buns and once lightly grilled, begin to build your burgers.
Place a modest amount of cheese on base of bun, place burger patty on top of cheese then pile a generous amount of cheese over burger patty.
Place top of burger on top, then cover with a large bowl to contain the heat which will help the cheese to melt just a little.
Serve with fries and condiments.

You can make these burgers in the kitchen, just use a grill pan or skillet.
