Ingredients

  • 1 lb 80% lean ground beef
  • Pinch salt
  • 1/2 cup smoked gouda shredded
  • 1/2 cup cheddar shredded
  • 1/2 cup gruyere shredded
  • 2 onion brioche buns

Instructions

  • Heat grill on a medium heat, then spray with oil, just a touch.
  • Form two 8 oz patties making sure the center of each patty is a less dense than the outer edges. Just gently press down in the center with your fingers and thumbs while holding each patty in both hands. Do not overwork the patty.
  • Sprinkle burger patties with a pinch of salt on each side and then cook to preferred temperature.
  • If you have a grill with a side burner or panel, set patties on that area, which should be a little warm, and allow to rest. If not, make sure to have a prep table to hand.
  • Combine the three cheeses and then split in half to apply to each burger and set aside.
  • Grill brioche buns and once lightly grilled, begin to build your burgers.
  • Place a modest amount of cheese on base of bun, place burger patty on top of cheese then pile a generous amount of cheese over burger patty.
  • Place top of burger on top, then cover with a large bowl to contain the heat which will help the cheese to melt just a little.
  • Serve with fries and condiments.
