Brunch Burger

Ingredients

  • 4 bacon rashers
  • 12 oz 80% lean ground beef
  • Pinch kosher salt
  • Cooking spray oil as needed
  • 2 sandwich sized muffins
  • 2 fresh eggs
  • 4 oz cheddar cheese sliced
  • Tomato ketchup as desired

Equipment & Utensils

  • Grill pan and skillet or grill and griddle pan
  • Aluminum foil

Instructions

  • Cook bacon to crispy and set aside
  • Form two 6 oz burger patties making sure the center of each patty is less dense than the outer edges. Just gently press down in the center with your fingers and thumbs while holding each patty in both hands. Do not overwork the patties, then set aside.
  • Heat grill or pan to medium heat. If using a grill, spray with a little oil, if not, then no need to add oil.
  • Sprinkle burger patties with a pinch of salt on each side and then cook to preferred temperature.
  • Once cooked, tent burger patties with aluminum foil and allow to rest for 3-5 minutes,
  • While burger patties are resting cut muffins in half and then lightly grill or toast and set on a plate.
  • If using a grill, place a griddle pan on your grill, spray with oil and cook eggs, ensuring a soft yoke. If using a skillet, spray with oil and cook eggs on a medium to low heat, ensuring a soft yoke.
  • Build burgers as desired but ensure the egg is on top of the pile.
  • Spread tomato ketchup on the inside of the top of the muffin, and carefully balance on egg.
  • Serve immediately
