Remove large stem from cauliflower, then remove florets and cut them into bite size pieces
Place florets in food processor and pulse until florets become rice like in texture.
You may have to process 1 head at a time.
Heat 2 tsp of oil in sauté pan on medium then add half the amount of processed cauliflower.
Sauté until cauliflower is warm.
Season with salt to taste, then cover pan and lower heat to simmer.
Allow to cook until grains soften slightly but still have bite.
Transfer to large bowl and cover with aluminum foil to keep warm
Heat the balance of olive oil, and then add the balance of processed cauliflower.
Repeat cooking process and then add to first batch in large bowl.
Serve family style or as required.
