Berkshire Pork Loin Roast

Ingredients

  • 2 lb Boneless Berkshire pork loin roast or medallion roast tied
  • 1/4 cup of extra virgin olive oil or olive oil
  • 2 tbsp fresh rosemary removed from stalks
  • 1/4 cup fresh parsley leaves chopped
  • 2 tbsp fresh garlic minced
  • 1/2 tsp ground allspice
  • 1/2 tsp cayenne pepper
  • 1 tsp coarse salt
  • 1/2 tsp fresh ground black pepper

Equipment & Utensils

  • Large Bowl
  • Roasting tin

Instructions

  • Place pork in a large bowl.
  • Whisk the balance of ingredients then rub all over pork in bowl.
  • Transfer to a roasting tin and then place in preheated oven at 400.
  • Cook until juices run clear for approx. 45-55 mins.
  • Allow to stand for 10 mins before slicing.

Notes

You can buy a loin roast tied or untied. A loin roast is best tied before cooking to keep it's shape. I bought an untied cut, so that I could cut any thick pieces of fat, and tied it up myself after applying marinade. If you want to avoid fiddling with chef's twine, it is fine to buy your cut of meat tied.
