Mix salt, pepper, honey, garlic and onion powders together, then pat all over the meat.
Do your best to pat as much of the seasoning as you can by pressing down so that it adheres to the meat.
Place rib roast in roasting tin on top of the rack and allow it to stand for approx. 10 minutes before placing into a preheated oven at 450.
Cook rib roast at this temperature for 30 minutes.
Reduce temperature to 350 and allow to cook for approx. 1 1/2 - 2 hours until desired temperature.
Remove from oven, tent with foil, and allow to stand for approx. 15-20 mins before serving.
Notes
If you have guests who enjoy varying temperatures, you can cook to the most popular lowest temperature and then return to the oven for further cooking those servings for your guests who prefer a higher temperature.
