Port Balsamic Red Onion Jam and Brie Canapés

Instructions
Peel and slice onions very thin
Heat olive oil in a pan on high heat then add onions.
Cook until scent releases then add salt and pepper.
Add 1/4 cup of honey and port and stir until the ingredients begins to bubble.
Add thyme and stir, then cover and lower heat to low.
Allow ingredients to cook until flavors are combined (approx. 5 mins).
Raise heat to medium and add a further 2 tsp of honey and continue to cook for approx. 10 mins until liquid reduces by 1/3
Remove from heat and allow to cool.
Cut baguettes into 1 inch slices and lay them out on a baking tray.
Slice brie (approx. 1/4 inch) and place on top of bread.
Place in a preheated oven at 400 and allow brie to melt just a little.
Remove from oven then top with red onion jam and serve
Notes
If you have one, use a mandolin to slice the onions
