Blistered Balsamic Cherry Tomatoes

Ingredients

  • 14 oz vine cherry tomatoes
  • 2 tbsp avocado or grapeseed oil
  • 2 tbsp balsamic vinegar
  • Kosher salt to taste

Instructions

  • Heat oil in skillet until very hot, then carefully place tomatoes in the skillet.
  • Lower heat to medium and allow tomatoes to heat through and blister.
  • Shake tomatoes around in the skillet to avoid burning.
  • Raise heat a little and then drizzle balsamic and again, shake around until the balsamic begins to reduce.
  • Sprinkle with coarse ground salt to taste.
  • Remove from heat and allow to cool just a little.
  • Serve immediately as desired.
