Ingredients

romaine lettuce heart leaves

sliced into thin lardons

cream cheese

minced after removing seeds and membranes

Instructions
Separate and wash romaine lettuce leaves then dab with paper towels and set aside to dry off.
Heat skillet then add bacon lardons.
Cook bacon until crispy, then remove with a slotted spoon and transfer to paper towels to drain.
In a bowl blend together the three cheeses, then add jalapenos, 1/3 cup chives, bacon and black pepper and mix thoroughly.
Place lettuce leaves on a serving platter.
Spoon just enough cheese mixture into each lettuce leaf.
Sprinkle balance of chives over canapes and serve immediately.

You can prepare these canapes ahead of time, cover with plastic wrap and place in the fridge
