Trim end of stalk and remove damaged leaves.
Rinse then pat dry with paper towels.
Weave slices of bacon around sprouts, use toothpicks to keep bacon in place where necessary.
Place stalk on a parchment paper-lined baking tray.
Whisk honey and balsamic vinegar together, then divide into two portions.
With a brush coat each and every Brussels sprout using one portion on the combined honey and vinegar.
Place in a preheated oven at 380 and cook for 1 hour removing from the oven every 15 mins to brush with second portion of honey and vinegar.
Once cooked the sprouts should still have some bite.
Remove toothpicks and place on a serving plate, or remove sprouts and bacon from stalks and place in a bowl.
Drizzle sprouts with leftover honey and vinegar just before serving.
