Before you start, take the brie out of the fridge and cut into 4 slices, 1oz per slice. Then allow to sit to raise to room temperature.
Place fry pan on high heat and then carefully place pancetta in pan.
Cook pancetta on each side until lightly golden on edges (approx. 1 min)
You will likely have to cook the pancetta in two batches.
Once pancetta is golden, place on paper towel and set aside.
Place croissants in a preheated oven at 400 to warm through (approx. 1 min)
Once croissants are warm, place them on a board and cut in half, starting at the thickest part of the croissant, sandwich style, but do not cut all the way through.
Place equal amounts of pancetta on the base of each croissant.
Then place a slice of brie on top.
Top with a slice of honeycomb and then carefully press down on the top of the croissant to keep everything together.
Serve immediately.
