Beef Bacon-Wrapped Filet Mignon

beef bacon

grapeseed or olive oil
1/2
tbsp
unsalted butter
Salt and pepper to taste
Equipment & Utensils
Cooking twine
Medium skillet that can be used on the stove and in the oven
Instructions
Wrap two slices of bacon around each filet quite tightly with cooking twine.
Heat oil and butter in skillet until really hot, but not smoking then add bacon-wrapped filets.
Allow to sear on each side for 3 minutes then remove from heat.
Cut away cooking twine as bacon should have now sealed around each filet.
Place filets in preheated oven at 450 and cook for 4 mins each side.
Remove from oven and allow to sit for 5-8 minutes, then serve and apply salt and pepper to taste.
