Beef Bacon-Wrapped Filet Mignon

Ingredients

  • 2 6 oz filet mignon
  • 4 slices beef bacon
  • 1 tsp grapeseed or olive oil
  • 1/2 tbsp unsalted butter
  • Salt and pepper to taste

Equipment & Utensils

  • Cooking twine
  • Medium skillet that can be used on the stove and in the oven

Instructions

  • Wrap two slices of bacon around each filet quite tightly with cooking twine.
  • Heat oil and butter in skillet until really hot, but not smoking then add bacon-wrapped filets.
  • Allow to sear on each side for 3 minutes then remove from heat.
  • Cut away cooking twine as bacon should have now sealed around each filet.
  • Place filets in preheated oven at 450 and cook for 4 mins each side.
  • Remove from oven and allow to sit for 5-8 minutes, then serve and apply salt and pepper to taste.
