Buttered Corn Salad

Ingredients

  • Half an iceberg lettuce sliced thin
  • 1 cup grape tomatoes halved
  • 2 tbsp scallions sliced - green part only
  • 1/4 cup fresh mint chopped
  • 2 tbsp unsalted butter
  • 2 cups corn kernels
  • 3 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • Mint leaves to garnish

Equipment & Utensils

  • Large mixing bowl
  • Large sauté pan
  • Large serving bowl

Instructions

  • Place lettuce, tomatoes, scallions and mint in large bowl and toss until combined.
  • Heat butter in large sauté pan then add corn kernels.
  • Sauté for 2 minutes then remove from heat and add to salad ingredients in bowl.
  • Whisk together lemon juice and oil and add to the sala.
  • Toss salad until all ingredients are thoroughly combined.
  • Transfer to a serving bowl and garnish with a few mint leaves.
