Ingredients
Half an iceberg lettuce
sliced thin

grape tomatoes
halved

scallions
sliced - green part only
1/4
cup
fresh mint
chopped

tbsp
unsalted butter
2
cups
corn kernels

lemon juice
3
tbsp
extra virgin olive oil
Mint leaves to garnish

Large mixing bowl
Large sauté pan
Large serving bowl
Instructions
Place lettuce, tomatoes, scallions and mint in large bowl and toss until combined.
Heat butter in large sauté pan then add corn kernels.
Sauté for 2 minutes then remove from heat and add to salad ingredients in bowl.
Whisk together lemon juice and oil and add to the sala.
Toss salad until all ingredients are thoroughly combined.
Transfer to a serving bowl and garnish with a few mint leaves.
