Lemon Elderflower Pimm’s

Ingredients

  • 2 x 6 inch skewers
  • 10 fresh blackberries
  • 4 inches greenhouse cucumber peel and cut into batons
  • Ice
  • 1/2 cup fresh lemon juice
  • 1/2 cup Pimm's No. 1
  • 1 cup St Germain elderflower liquueur
  • Ginger ale
  • 2 sprigs fresh mint

Equipment & Utensils

  • Cocktail jug
  • Stirrer
  • 2 x tall glasses

Instructions

  • Push 5 blackberries onto each skewer and place 1 in each glass.
  • Add cucumber at least 3 batons to the same glasses.
  • In a cocktail jug, place a couple of handfuls of ice then pour lemon juice, Pimm's and St Germain on top.
  • Stir gently, then divide into the two glasses, leaving 1-2 inches of space at the top of the glass.
  • Top the cocktail with ginger ale, and garnish with a sprig of mint.
  • Serve immediately.
