Ingredients

from a brioche loaf

oat milk or almond milk

tbsp
unsalted butter
melted + 3 tbsp unsalted butter (solid)

large egg + 2 egg yolks

light brown sugar

Baileys

vanilla extract

tsp
ground cinnamon

fine salt

of fresh seasonal fruit
Powdered sugar and maple syrup to serve
Instructions
Place brioche slices on a baking sheet in a preheated oven at 300.
Remove bread once bread feels dry but has not begun to fully toast.
Lower oven to 200.
Warm milk on a medium heat in a saucepan until you see small bubbles form around the edges.
Add melted butter and gently whisk to combine then remove from the heat.
Place egg and yolks in a mixing jug and add sugar, Baileys, vanilla, cinnamon and salt and whisk thoroughly.
Whisking gently add warmed milk mixture.
Pour batter into a wide shallow bowl and coat both sides of each brioche slice by pressing it into batter for 15 seconds.
After coating, place on a wire rack placed on top of a baking sheet.
Heat 2 tbsp butter in a large skillet on medium heat and add four slices.
Cook on both sides until golden and return to wire rack on top of a baking sheet.
Add another tbsp of butter to the skillet to cook the second batch of brioche slices.
Once all brioche slices are golden, place baking sheet with brioche in the oven for 10 minutes.
Serve with fresh fruit, powdered sugar and maple syrup.
Notes
Keep the batter warm by placing it on the stove until ready to coat brioche.
