Kale salad with carrots, cranberries, walnuts, bathed in olive oil and lemon juice

Ingredients

  • 8 kale leaves chopped
  • 2 carrots shredded
  • 1/2 cup cranberries
  • 1/2 cup walnuts
  • 1/2 tsp salt
  • 4 tbsp olive oil
  • juice of 2 lemons

Instructions

  • Place kale, carrots, cranberries and walnuts in a large salad bowl.
  • Season with salt and toss
  • Then add olive oil and lemon juice and toss once more
  • Serve as desired
