Instructions
Peel beets and then cut into sections that will allow the beets to fall through your juicer easily.
Juice beets, remove the frothy head from the juice, and set aside.
Place blackberries and strawberries into a blender and top with beet juice.
Blend on medium until berries have completely disintegrated.
Divide contents of blender into two bowls.
Using a spatula as a guard, carefully scatter cranberry nut mix on top of blended berries and beets up to the diameter of your bowls.
Garnish the other half of the bowl as you like with berries and serve immediately.
Notes
I suggest that you peel the beets before juicing. This will tame the strong earthy taste you get when juicing with skin on. If like me you enjoy the earthy taste, just remove stems and leave the skin on, cut beets to necessary size and juice.
