Marinara Poached Eggs with Sausage

Ingredients

  • 1 tbsp olive oil
  • 1 lb sweet Italian sausage
  • 5 cups marinara sauce
  • 4 jumbo eggs
  • Black pepper to taste
  • Few sprigs of fresh basil to garnish

Equipment & Utensils

  • Large skillet
  • Aluminum foil

Instructions

  • Remove sausage from casings.
  • Place skillet on high heat, and when hot, add olive oil then once heated add sausage.
  • Sauté sausage until just cooked, you should have a pan full of cooked and crumbled sausage.
  • Lower heat to medium and then gradually add marinara sauce.
  • Stir sauce and sausage as you apply the sauce so that they mix together thoroughly.
  • Allow sauce to heat through while stirring.
  • Once sauce is hot create divots in the sauce and sausage to act as wells for the eggs, then crack the eggs into those wells. Do this one at a time to make sure you don't lose your wells.
  • Cover skillet with aluminum foil and lower heat to low and allow eggs to poach slowly.
  • Once eggs are cooked to your liking serve with a touch of black pepper and a sprig of basil.

Notes

Both the marinara sauce and sausage are likely to have a decent amount of salt, hence the omission of salt from this recipe. You can apply salt if you like, but I would suggest you do that once served.
