Marinara poached eggs with sausage is a hearty dish. There is no better partner for this dish than bread or crackers.  I usually go for flatbread crackers and work my way though this medley of eggs sausage and sauce. A very slow and happy process for me.

This is a filling dish that will satisfy the heartiest appetite, but be warned it tastes so good that you might be inclined to keep swallowing mouthfuls without realizing you’ve gone to far. I did!

Marinara poached eggs with sausage can be whipped up in less than 30 minutes. Exactly what you need if you are looking for something to eat to satisfy a very empty stomach or return nutrients to your body after neglecting it the night before.

Marinara Sauce by Diverse DinnersIf you have more time though, why not create the marinara sauce yourself? My recipe for marinara sauce is pretty simple and lip-smacking tasty. The sauce consistency is a little coarse, and it is also ideal for meatballs or a tomato base for pizzas. It’s a truly versatile sauce, but if you prefer it smoother, just blitz it in a blender and you’re good.

I’m in love with this marinara poached eggs with sausage recipe. The ease of making this dish along with its luscious flavors and hunger quashing abilities results in a comfort-inducing moment that makes this a winner.

  • 1 tbsp olive oil
  • 1 lb sweet Italian sausage
  • 5 cups marinara sauce
  • 4 jumbo eggs
  • Black pepper to taste
  • Few sprigs of fresh basil to garnish

Equipment & Utensils

  • Large skillet
  • Aluminum foil

Instructions

  • Remove sausage from casings.
  • Place skillet on high heat, and when hot, add olive oil then once heated add sausage.
  • Sauté sausage until just cooked, you should have a pan full of cooked and crumbled sausage.
  • Lower heat to medium and then gradually add marinara sauce.
  • Stir sauce and sausage as you apply the sauce so that they mix together thoroughly.
  • Allow sauce to heat through while stirring.
  • Once sauce is hot create divots in the sauce and sausage to act as wells for the eggs, then crack the eggs into those wells. Do this one at a time to make sure you don't lose your wells.
  • Cover skillet with aluminum foil and lower heat to low and allow eggs to poach slowly.
  • Once eggs are cooked to your liking serve with a touch of black pepper and a sprig of basil.

Notes

Both the marinara sauce and sausage are likely to have a decent amount of salt, hence the omission of salt from this recipe. You can apply salt if you like, but I would suggest you do that once served.
