Lemon Mint Tea

Ingredients

  • 1 Meyer lemon
  • 1 bunch fresh mint
  • 2 cups of boiling water plus extra as needed
  • Sweetener optional

Equipment & Utensils

  • Muddler
  • Strainer

Instructions

  • Cut two thin slices from the middle of the lemon, and squeeze the juice from the two halves of lemon left over.
  • Trim away any bruised mint leaves and stems.
  • Remove two stems of mint and set aside.
  • Place the rest of the mint in a heat-safe jug and add lemon juice.
  • Bash mint with muddler. It will bruise the mint leaves and release its scent and flavor.
  • Top with 2 cups of boiling water and allow to steep for five minutes.
  • Using a strainer, divide the steeped lemon mint tea into two cups
  • Place one stem of mint into each cup then top with hot water.
  • Add sweetener if required and serve immediately.
