Plantain Ricotta Toast
A sweet and tasty brunch-worthy meal

- 1/4 cup canola oil
- 2 plantains sliced
- 2 cups ricotta
- 8 slices bread
- 8 x 1 tsp honey
Heat oil in pan.
Carefully place plantain slices into hot oil and fry until golden and, if possible, crispy on either side. If your plantains are very sweet the sugar will begin to caramelize and become crispy.
Once plantain slices are fried place them on paper towels to drain.
Toast bread and then place two slices of bread on each plate.
Smear each slice of toast with 1/4 cup of ricotta.
Top with plantain slices and then drizzle each slice of toast with 1 tsp of honey
