Place parsley and onions in a bowl.
Mix together oil and vinegar and drizzle over parsley and onions.
Mix together until completely combined and then sprinkle with salt.
Heat cooking oil in fry pan until hot and fry eggs to desired doneness.
Once eggs are cooked, place on a plate to allow oil to drain.
Toast bread and place on plate or platter
Divide parsley into four and place on toast.
Layer with radish slices, then place an egg on top.
Serve immediately.
