The lamb is cooked slowly until the temperature reaches 140 degrees, at which time the heat is raised to brown the meat. 140 degrees for this cut of meat is medium, if you prefer medium well, you should allow your lamb to get to a temperature of 165 degrees.

This is a tasty treat for the tastebuds, the tzatziki sauce works so well with the aromatic lamb. It’s a simple sauce made of sour cream, cucumber, dill, lemon and garlic, with a touch of pepper. It’s totally yummy.

Ingredients

Tzatziki Sauce

  • 1/2 cup sour cream
  • 2 tsp lemon juice
  • 1 garlic clove grated
  • 1/3 cup cucumber grated
  • 2 tsp fresh dill removed from stalks
  • Pinch of ground black pepper

Spiced lamb

  • 1 tsp coriander
  • 1/4 tsp cumin
  • 1/2 tsp cayenne
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 tsp Worcestershire sauce
  • 1 1/2 tbsp olive oil
  • 3 lb boneless lamb tied

Equipment & Utensils

  • Roasting tin
  • Meat thermometer

Instructions

Tzatziki Sauce:

  • Mix together sour cream, lemon juice and garlic until completely combined.
  • Add cucumber, dill and pepper and mix once more to combine.
  • Transfer sauce to a serving dish, cover with plastic wrap and place in fridge until ready to serve.

    Spiced Lamb

    • Mix together coriander, cumin, cayenne, onion and garlic powder, salt and pepper.
    • Add Worcestershire sauce and olive oil and whisk until completed combined.
    • Rub all over lamb, then place in a preheated oven at 375 and cook for 1 1/2 hours.
    • Baste lamb every 30 minutes with released juices to reintroduce flavors.
    • Test temperature of lamb and once it reaches 140 degrees, raise heat in oven to 410 and cook for another 15 minutes to brown the lamb.
    • Remove from oven and allow to rest for 15 minutes.
    • Serve with tzatziki sauce when ready.
