Cashew Butternut Squash Soup, is a medley of flavors. Mostly mild tasting ingredients, with the usual mirepoix base of onions, carrots and celery in butter. Chunks of potatoes and butternut squash are added, and followed with cashew milk and chicken stock. Finally, the flavor is amped up with some garam masala. It’s marvelous!
Black Rice Noodle Roasted Maitake Soup is so delightful. Nicely filling with oodles of flavor and variety in texture. This soup is gluten free, and no meat is added. If you nix the egg, it’s vegan too.

Finding meat free dishes that I enjoy is not always easy. I am a true meat lover, but I do like to take a day off from eating meat once in a while. So I worked on a pasta dish so that I would have something hearty to eat on those days I wanted to avoid meat. It’s mushroom ricotta pappardelle, a fantastic meat free meal.
