If you’re like me, now that warmer weather is on the horizon, you will be more inclined to ditch the comfort food, laden with carbs, and instead enjoy a lighter perhaps more nutritious meal. Well, today’s recipe is a main course ideal for warmer days and nights – it’s snapper fillet with spicy mango sauce.
Today’s recipe is stewed spicy basil chicken. It’s a combination of Thai and Chinese flavors. It’s a wonderful dish and really difficult to walk away from. If you’re going to cook this dish, invite only one person to share it with you, as you might find that you will both want another serving.
Sweet and spicy coleslaw is a quick and easy salad that goes with so many meals. You can use any variety of the usual coleslaw ingredients if you like, but I used napa cabbage and radicchio. A great combination of flavors and gives great eye appeal.

I am exhausted. I have been so busy, I’ve barely had time to relax and enjoy a good meal. I’ve endured mediocre take out meals for the entire week, and by Thursday, my digestive system was completely shot.
